Few things scream summer as much as watermelon. It’s sweet and refreshing, not to mention hydrating – just what we need during the brutal Texas summers.
Watermelon is not just for kids, and it’s certainly not just for slicing. So as we dive into the hottest month of the year, which also happens to be peek watermelon season, here are a few of my favorite ways to incorporate watermelon into any menu.
Watermelon, Feta, Arugula Salad with Mint
This is my summer salad staple – easy enough to whip up for the family but looks pretty enough to bring along to any gathering or party.
As with all soups, the flavors only get better and better. Whip up a batch on Sunday and you’ll have a something light and refreshing to snack on all week.
When I was pregnant, I was always on the lookout for a ‘special drink’ – a girl can only drink so much water. This would have been perfect!
If you’re short on time, just mix watermelon and greek yogurt together and pop them in the freezer for a healthy treat. But if you want to go for it, try these – the color and flavor are pretty amazing.
I’m a salt-on-the-rim kind of girl so this margarita is right up my alley. I made a batch this weekend and they did not last long.
Ok, so these don’t really qualify as a healthy, refreshing or even watermelon based, but there were too cute to pass up!
