My mom is the type of person who loves to recreate images from cookbooks. So even a simple fruit and yogurt breakfast can turn into a presentation. She’s made yogurt parfaits for years but she just introduced them to our kids during her last visit. And now, a regular bowl of yogurt simply will not do.
The good news is yogurt parfaits are simple to make (+ a healthy way to start your day.) They’re a great addition to a Mother’s Day or Father’s Day breakfast in bed. You can make these ahead of time for fun brunch (just add the granola in the morning of so it doesn’t get mushy.) And if you just need a fun family breakfast, it’s something the kids can help make on their own. Mix and match whatever fruits and granola they prefer. You might even be able to convince them it’s a breakfast Sunday!
Grab your favorite fruits or whatever is in season – summer is berry time, but peaches, pears, figs or even pomegranate seeds would taste great. If you’re doing make-it-yourself yogurt parfait station, just assemble a few bowls of fruit, your favorite granola, a good plain or vanilla yogurt and some honey to add a bit of sweetness. (Flavored yogurts usually have a ton of sugar, so I stay away from those.)
Simply layer away – yogurt, granola, fruit, honey.
Then dig in and enjoy!
